Iris was born and raised in Santa Barbara, Honduras and glows when she sees the joy her culinary skills bring to people. Her catracha-style adds new flavors to the Crescent City offering Honduran foods and adapted dishes to the variety of customers that visit her family-run lonchera (taco truck). Iris serves classic Honduran dishes like baleadas (with tortillas made from scratch daily), taquitos, and tamales from her taco truck located in the lower 9th Ward. Working alongside her sisters, Iris sells delicious foods and hot plates from the window of her food truck “La Diva” which has graced corners and parking lots across the 7th and 9th Wards since 2016. Drawing from her stint as a bartender at a Mexican restaurant and appealing to a range of immigrants and New Orleans-natives who frequent her truck, Iris includes dishes like Mexican chicken tinga tacos to her mostly Honduran menu to ensure there’s something for everyone to enjoy. Iris nació y se crió en Santa Bárbara, Honduras, y brilla cuando ve la alegría que sus habilidades culinarias brindan a las personas. Su estilo catracha agrega nuevos sabores al Crescent City ofreciendo comidas hondureñas y platos adaptados a la variedad de clientes que visitan su lonchera familiar. Iris sirve platos clásicos hondureños como baleadas (con tortillas hechas desde cero todos los días), taquitos y tamales en su lonchera ubicado cerca de Circle Foods. Trabajando junto a sus hermanas, Iris vende comidas deliciosas y platos calientes desde la ventana de su camión de comida "La Diva", que ha adornado esquinas y estacionamientos en los distritos 7 y 9 desde 2016. A partir de su período como camarera en un restaurante mexicano y atrayendo a una variedad de inmigrantes y nativos de Nueva Orleans que frecuentan su lonchera, Iris incluye platos como tacos mexicanos de tinga de pollo en su menú principalmente hondureño para garantizar que haya algo para que todos disfruten.
