Indigo grew up between Ville Platte and New Orleans and learned to cook by spending time in the kitchen with his grandmother. Around 2013, Indigo began to experience pain that felt out of alignment with his young age, prompting him to heal his body by changing his diet and adopting veganism. Nowadays, Indigo–a father and dedicated partner–hosts a weekend vegan pop-up at Art Bar located in the Marigny neighborhood. Indigo’s recipes span the globe, drawing from Korean, Mexican, Vietnamese, and Soul food influences. His creative twists spice up vegan dishes and include a variety of ingredients –like microgreens, radishes, edible flowers, and shiso leaves. The details add rich taste and aesthetic touches to his trumpet mushroom tacos and pepperpot bossam. He is intentional about where he sources food and is innovative in the equipment he uses–you can often find him with his Binchotan charcoal and Konro grill cooking delicious vegetables and soy nuggets. @indig0soul
